Smoked Beer/Pepper Jerky

Ingredients:

2 lb London Broil

Mix in large bowl:

1 22oz Snow Boarder Porter from Boise Brewing (1/2 for marinade 1/2 for chef)
1 Cup Yoshida's Marinade or (3/4 cup Worcestershire and 1/4 cup Soy sauce)
3 tablespoons honey
1 tablespoon black pepper
1 tablespoon Kosher salt
2 teaspoons chili powder
1 tablespoon garlic powder
1 tablespoon onion powder

Cut meat into 1/4 inch strips
Soak in marinade overnight
Remove and dry strips with paper towel
Place on smoker racks leaving space between and sprinkle with cracked black pepper

Heat smoker to 165-175 degrees and fill wood chips
Place beef in smoker and after 45 minutes to an hour add more wood chips
Cook until beef starts to crack when bent (5 hours in my smoker)


I used Hickory and Apple chips
